Rustic Yemeni Potatoes

Stewed Potatoes with caramelized onions and tomatoes

Potatoes sometimes get a bad reputation for being unhealthy. These potatoes are insanely satisfying and comforting, without the guilt! They reheat beautifully and go perfectly with pretty much any protein. This is also the perfect side dish for any meal and will satisfy all your guests. Warning: they are addicting.



Ingredients:

4 large golden potatoes أربع حبات بطاطا

6 garlic cloves ستة حبات ثوم

2 cups diced tomatoes كبايتين طماطم مقطعة

2 cups diced yellow onions كبايتين بصل مقطعة

1 tablespoon tomato paste ملعقة ك صلصة طماطم مركزة

2 tablespoons olive oil ملعقتين ك زيت زيتون

1 tablespoon Yemeni Hawayij ملعقة ك خلطة بهارات يمنية

Salt to taste ملح حسب المذاق

4 tablespoons chopped parsley أربعة ملاعق ك بقدونس

Optional: ¼ teaspoon red pepper flakes إختياري: فلفل أحمر



Directions:

  1. Peel and quarter the potatoes, then cut each quarter in half.

  2. Place cut potatoes in a deep pot and pour cold water over them. Water should be at least 3 inches above the potatoes' surface. Salt water with 1 - 2 tablespoons of salt. Boil until fork tender.

  3. Heat a separate deep pan over medium-high heat then add 2 tablespoons of olive oil. Add chopped yellow onion to pan and saute until golden brown.

  4. Add chopped tomatoes and tomato paste to onions and continue to saute until tomatoes are wilted down.

  5. Add crushed garlic and continue to cook through until 90% of the tomato's juices are dried out. Then add 1 tablespoon of Yemeni Hawayij.

  6. Strain potatoes and add to onion and tomato mixture. Mix well to combine without bruising potatoes.

  7. Add salt to taste and garnish with chopped parsley.

I love potatoes in every way but especially this way, soft and fluffy and very flavorful. Makes for a great side but can be enjoyed as a lunch for me personally :)
