This creamy asparagus soup will have you reaching for seconds. I also love that it takes no time at all to come together, so it is perfect for weekday nights. I suggest grabbing the large bag of fresh asparagus from Costco for this recipe.
3 tbsp unsalted butter ثلاثة ملاعق ك زبدة
1 large bag of fresh asparagus (Approximately 2 pounds before trimming) / كيلو اسبرقس او الهليون
1 large yellow onion, diced بصلة صفراء كبيرة
3 large garlic cloves, minced ثلاثة حبات ثوم
1 large russet potato, pre-cooked or chopped بطاطا كبيرة مطبوخة
1 carton of chicken broth علبة مرق الدجاج
Salt & pepper to taste ملح وفلفل حسب المذاق
1/2 cup heavy cream نص كباية كريم
Melt 3 tablespoons of butter over medium high heat then saute the diced yellow onion. Add a sprinkle of salt so they break down quicker.
Once the onions are translucent, add the minced garlic and saute until fragrant.
Add the chopped asparagus. Make sure you prep them ahead of time by trimming off the tough bottoms.
Add the chopped russet potato. It is best if it was baked or boiled ahead of time.
Cover the vegetables in chicken broth and bring to a simmer. Once the vegetables are form tender, blend using an immersion blender until it is very smooth.
Add 1/2 cup (or more) of heavy cream and adjust seasoning to taste with salt and pepper.
If you feel like your blender isn't making the soup smooth enough, you can pour it through a sieve to ensure no asparagus fibers are left behind.
To feel extra fancy, drizzle in a tiny bit of extra heavy cream when serving and swirl it in with a fork or tooth pick.
Serve with hot Parmesan croutons or Parmesan crisps.
